Madison, WI, USA. August 2017. Chef Tory Miller, of L'Etoile, Graze, Estrellon, and Sujeo, approached me to craft a custom Green Bay Packer-inspired handle for his Konosuke 270mm HD.
Tory has owned the Japanese steel since 2010, when he moved L'Etoile to its new location and opened Graze. He has used it almost every day since, opening two other kitchens and doing countless events with this blade in his bag. It's his favorite, his go-to. For many years he dreamed of putting a custom handle on her. The results left him "speechless."
Materials include: spalted tamarind ferrule, reconstituted black and gold onyx spacer, double dyed maple burl, polished brass, maple burl and sparkly blue/green acrylic hybrid end cap, and of course fiberboard Packer Stripes.
